I started from my recipe for duchess potatoes, enriching it with Genoese pesto that gives color it's true, but also adds that right extra aromatic touch. Method

How to make potato saplings

In a pot with water, cook the potatoes. Once it has boiled, cook for about 30 minutes.
When the potatoes are cooked, drain, peel and mash them, collecting the puree obtained in a bowl.

Now add the yolk, Parmesan, salt and nutmeg and mix.
Then add the pesto too.

Mix everything until you get a homogeneous mixture then transfer it to a pastry bag with a star spout.
Form the saplings directly on a baking sheet lined with parchment paper.

Bake in a preheated oven at 180 ° C for about 20 minutes.

Once cooked, decorate them. With the help of a mold, create the cheese stars.
Stick them with toothpicks and place one per tree.

Your potato saplings are ready to be brought to the table.

* white potatoes 1 kg
* flour 250 g
* 1 egg

* extra virgin olive oil


Preparation:

Boil the potatoes in their skins, once cooked, peel them and mash them in a potato masher, collecting the purée on a pastry board. Add the flour, nutmeg, salt, pepper and finally the egg.

Knead, if necessary adding more flour, then form balls that you will then model according to the shape chosen.

Heat the oil in a pan with high sides and fry the pancakes a few at a time, drain them on absorbent paper to remove the excess and serve both hot and lukewarm.


Potato saplings - Recipes

Trees as a centerpiece for Christmas lunch (or dinner)? Yes, but edible! And delicious, too. If you want you can also prepare them in advance, because once done, they keep well for a couple of days in the refrigerator (the only thing I recommend to prepare at the last, is the star of provola, so in the refrigerator it will not dry out) .

To make these little trees you will need to get star-shaped cookie cutters of four different sizes (the ideal sizes are 3 & # 8211 5 & # 8211 7 & # 8211 9 centimeters). Depending on the size of your cookie cutters, you can make 3 or 4 saplings. To make the pesto cream cheese, you can use a ready-made pesto, or you can follow the recipe: // 1329 Pesto alla Genovese.

First, lightly beat 6 large eggs (if yours are medium, use 8) in a bowl, along with 50 g of grated Parmesan cheese, a pinch of salt, 150 g of boiled and finely chopped spinach and 10 g of chopped fresh parsley, then pour this mixture into a 26 x 38 cm baking pan lined with parchment paper brushed with a little olive oil. Cook the omelette in the preheated oven in static mode at 180 ° C for about 15-18 minutes, or in any case until it is well cooked.

Once cooked, take it out of the oven and let it cool completely, and in the meantime prepare the pesto cream cheese: in a bowl mix 100 g of Philadelphia together with 50 g of white Greek yogurt, 20 g of fresh liquid cream and 1 teaspoon of pesto, until a smooth and uniform cream is obtained. Transfer the cream to a pastry bag and keep it aside in the refrigerator.

With a 2 or 3 cm star cookie cutter, cut out 3-4 stars from the provola, stick them on the tip of some toothpicks and keep them aside.

When the omelette is cold, cut out three or four shapes for each star size. The leftover omelette can be cut into small pieces and used to make a salad, for example.

Squeeze a little Philadelphia cream on the larger stars, then cover with the slightly smaller stars, staggering the tips and proceed in this way until all the stars run out. Complete the saplings by piercing them with a toothpick, at the end of which a provola star is attached.

If you want, decorate the saplings with pink pepper berries. Your omelette saplings are ready!


Saplings of Duchess

This year for the Christmas dinner I finally found the time to try various recipes that I always saw on the web ..
First of all the puff pastry saplings on the stick. Here is the first recipe ..

Ingrediants:
- rectangular puff pastry
- pesto
- tomato concentrate
- grated Parmesan cheese
- medium length wooden sticks
- pitted green olives

unroll the puff pastry and with the help of a pizza wheel and a ruler with a thickness of about 1-1.5 cm, cut out many strips of the length of the short side of the pastry.
Spread some with pesto, others with tomato paste and sprinkle with Parmesan. now fold each strip into an "accordion" so to speak, lowering each round the measure in order to obtain the saplings.
Now stick them on the stick and place them well apart on a baking sheet with parchment paper.
Cook for about 20 minutes or until they are puffy and golden.
Let it cool and stick an olive on the tip and serve .. stick them in a round of coated polystyrene, or on a display for cakepops or even on a small piece of Asiago cheese.

How to make potato saplings:

1 Wash and peel the potatoes, pour them into a saucepan, cover with water and cook over high heat until soft.

2 Check the cooking by inserting a fork or knife inside, if it goes down easily they are ready.

3 Drain them either with a colander or skimmer and mash with a fork. Mix them with the salt, egg, chia and poppy seeds and the milk a little at a time, until the mixture is smooth, homogeneous, soft, but compact.

4 Pour all the dough into a pastry bag with a large enough star spout and form fairly high tufts on a baking sheet with parchment paper.

5 Then bake in a preheated oven at 250 ° C ventilated for about 20 minutes or until the trees are golden brown. Serve both hot and cold.


Potato saplings

To bring beautiful and delicious to the table potato saplings you have to start with the potatoes, which will be boiled in salted boiling water for about 30 minutes or cooked in the microwave or steam.

Once cooked, the potatoes will be mashed with the special tool so as to reduce them to a puree.

Make a bowl in the center of your potatoes and then add the egg yolks, the melted and warmed butter, the grated Parmesan cheese, salt and some chopped parsley. We mix in order to obtain a homogeneous puree.

At this point we pour the puree thus obtained inside a sac à poche with a star tip, which will allow us to obtain the typical shape of a sapling.

With the sac à poche, create the saplings on a baking sheet lined with baking paper. We proceed like this until we have finished the puree. Then put in the oven to bake at 180 ° C for about 15 minutes or until golden brown.

in the meantime, prepare the stars that will be used for decoration. Slice some provolone (Galbanino in my case) and then make your stars with a star-shaped cookie cutter.

Then insert the stars in a toothpick and then insert it in the center of your saplings once cooked and warm. They will be really beautiful.> / P>


How to prepare the saplings of sandwiches

Spread the first slice of sandwich bread with the pesto (1), cover with another slice and add the salmon, continue with the layers adding the capricciosa salad, the yogurt sauce and the songino, until you finish the ingredients ( 2).
